3a.   Lists of Some Acceptable Foods on the GFCF Diet
 

Below is just a list that I put together of food I eat.  It is by no means a comprehensive list of all foods that are safe to eat on the diet.  There are more foods.  This list is a beginner's list, something to help get you started.  See the websites listed in Section 3d for more food lists.

Rice pasta, Corn pasta
Arrowhead Mills peanut butter.  I took it all out of the bottle, mixed it in my mixer (to put the oil back in) then put it back in the jar and put it in the fridge.  Perfect!
Tapioca bread  (not frozen)  really good, try it toasted
Rice cereals (lots at the health food store say gluten free),  I love all of them.  Nutty Rice is crunchy like Grape nuts.   My favorite is Crispy Rice Cereal, from Nature's Path.
Izze fruit sodas.   Blue sky sodas.  (others are safe, but these 2 appear to be are the healthiest, with a simple list of ingredients)
fruit juices
Rice milk
jellies and jams
most pasta sauce appears to be safe, but check
Almond or other nut milks
Larabars.  Macrobars.  there are other bars, but I don't remember their names. 
any cheese-free or butter-free popcorn is great. 
applegate farms meats  (in meat, you need to avoid not only gluten, but nitrites, which are in all preserved meats.)
Boar's Head meats.  (both boar's head and applegate are also available at the deli counter, where the slice the meat for you.  Yes, some meats have gluten added to them.)
Naked brand juice  (Stay off of Odwalla juices if they have wheatgrass in them.)
Earth Balance whipped vegan butter
mashed potatoes (I love them!), with real bacon bits (optional), vegan butter, and sea salt
Stew!  be sure to use gluten free and MSG free broth or bouillon
corn shell tacos or taquitos are good
Alexia oven fries are great.  Rosemary or Sea Salt versions.  get organic gluten free ketchup to go with them.
rice with sesame seeds, salt (no soy sauce), and broccoli is excellent
eggs and omelets  (if eggs are tolerated, they're not for me)
fruit.  vegetables. 
original hummus and Mary's Gone Crackers (though I hear there are better crackers out there)
beans
nuts
rice, any kind
water
alternative flours, made from potatoes, rice, corn, tapioca, quinoa, etc.

More Information

Be sure to always read labels.  The labels probably will not list "gluten" or "casein" as ingredients.  They might not even list "wheat".  If they say "flour" without saying what kind, that means gluten-containing wheat flour.  See section 3b for a list of what names gluten and casein can be included in on ingredients lists. 

Other notes:  Apparently there are (I hear) kid-friendly foods out there, including corn dogs and breaded chicken nuggets.  The only eat out food that I've found is tacos w/o cheese at Taco Bell (sauce may have wheat, I don't know), and meat and potatoes and veggies at restaurants.  I often eat a potatoes that I bake in the microwave, simple and fills me up.  I just scrub it, poke it with a knife a few times, and throw it in there just like that for 5 minutes for a small potato.  Flip it over halfway through the time.  Then put on the toppings listed above.  Also good is twice baked potatoes, also, with the above ingredients.

Most moms I know also like to collect GFCF recipes and cook them themselves.  There are lots of books full of those recipes.  There are also some parents who have made web pages or YouTube videos teaching what they like to eat and feed their kids on the diet.  The diet is really growing in popularity, and finding new food sources and recipes is growing easier every day, especially if you have internet access.   

Last week I found The Essential Gluten-Free Grocery Guide for Spring 2008.  I bought it from People's Pharmacy.  It lists all name brands and their foods for every category of food, so I can look up anything.  Very useful.

A Note About Rice Dream Milk

Most people who need to avoid gluten and dairy also will need to get off of soy.  Soy milk is not recommended for these individuals.  Personally, I like Rice Dream milk, and use it in my GFCF rice cereal.  You may hear that Rice Dream rice milk contains gluten, however, it is only a minute amount.  Apparently that is true, but it only contains a tiny fraction of a percentage of barley malt, which may or may not include any gluten in it.  The words "Gluten Free" are specifically written on the back of the box, on the right side, halfway down.  Rice Dream has such a small amount of gluten it still qualifies under the guidelines of "gluten free".  Most people can probably digest Rice Dream, especially if also taking supplemental digestive enzymes.  I'm on a strict GFCF diet, and I notice if I accidentally ingest any gluten or dairy, but I have no problems with Rice Dream.  However, some really sensitive people may  need to avoid it.  Other options include Pacific Rice Milk, DariFree milk, nut milks, or avoid milk altogether.
